Pea Soup in the InstaPot

I’m a huge fan of AllRecipes.com. Sometimes I find myself merging a few recipes I find there to create my own concoction. Then I get frustrated when I forget what I did so I decided to blog some of my favorites — the way I like them.

Vegetarian Pea Soup

Prep Time 15 minutes
Cook Time 3 hours
Course lunch, Soup
Servings 12

Equipment

  • Instant Pot
  • Immersion Blender

Ingredients
  

  • 1 tbs olive oil
  • 1 diced onion
  • 4 cloves of garlic — crushed or sliced
  • 3 cubed sweet potatoes
  • 2 c split peas (yellow or geen) or lentils
  • 2 large carrots cut into pieces
  • 2 tsp Italian Seasoning
  • 1 tsp chili powder
  • 1/2 tsp black pepper
  • 7 c water
  • 1 crushed bullion cube

Instructions
 

  • Sautee the onions and garlic in the olive oil until the onions are translucent (about five minutes).
  • Throw in all the rest of the ingredients and cook on the Soup setting for 3 hrs. Keep the steam nozzle in the closed position.
  • Blend with an immersion blender after it's done cooking.

Notes

I don’t peel the potatoes or carrots. You get little tastes of them occasionally, but not much. I like the nutritional value they add. And I’m lazy in the kitchen and don’t want to peel them all.

  1. Love your creativity. Love rhubarb, too! The rhubarb butter sounds delicious. When I have my own kitchen, I’ll try it. Not a fan of pea soup. Norwegian pancakes. I have a great story. Way back when I lived in Washington, DC, with my flatmate Buz, I tried making Norwegian pancakes after I received the recipe from your Mom following a visit to your home. This wonderful older gentleman Buz knew from her days in youth when the piano tuner would come to her home, came to tune the piano (second-hand) that her parents bought for us. It just so happened that he arrived in the middle of my preparing the pancakes and after he finished tuning the piano, I asked him if he would like some pancakes. He was thrilled and this little man ate more than Buz and I put together. And then, bless his heart, he refused to take money for tuning our piano. I guess he considered the bill paid in full with Norwegian pancakes. What a great deal!!

  2. We like split pea soup and usually wait until we have a ham bone to prepare it. It’s wonderful to know we could use sweet potatoes and carrots as the base. Thanks for this great recipe.

  3. Looks delish! But my sweetie doesn’t like sweet potatoes! Guess I could use regular ones? Add an extra carrot for colour?

    • The original recipe actually had real potatoes. As a huge sweet potato fan, I made the substitution myself. I think the main color comes from the peas themselves so that shouldn’t be an issue.
